Sunday Dinner At Papas


{—To Papa (daddy) whom I love more than chocolate chip cookies.}…..

–As long as I can remember,  we’ve been going to Papa & Saint Shirley’s for Sunday Dinner.

 

And of course, Papa makes his famous Spaghetti w/ Kick Ass, and I mean, Kick Ass Sauce.

We are LOUD)))).  We are OPINIONATED)))).   We are ITALIAN))))).

In fact, if you listen reeeeally hard, you may hear our craziness & sharp tongues all the way from Minnesota.

Shhhhhhhhhh.

This is my first food blog.  

I must say,  I enjoyed every single  minute following my Papa around clicking photos of him in all his glorious magic…

Papa’s Spaghetti Sauce

 

½ pound of bacon (diced)

1 large onion

1 green pepper (can use red or yellow, too)

1 spring parsley

1 cup celery (diced)

3 cloves garlic

  —-if you do not have homemade canned tomatoes, use:

1 28 ounce diced tomatoes

1 15 ounce tomato sauce

1 12 ounce tomato paste

½ cup of dry parmesan cheese

1 T white sugar

Directions

 

–fry bacon until almost done

–add onion, pepper, celery, parsley & garlic

–drain grease

–fry all ingredients w/ extra virgin olive oil until golden brown

–add ALL cans of your tomatoes & white sugar

–add cheese to sauce & simmer until you get the taste you desire.

–for meat:  you can use pork ribs,  Italian sausage, or pork hocks. (or all of them!) 

Any pasta will work beautifully w/ this sauce.

   Note:  the meat & bacon are vital to the sauce.  Must be cooked before adding to sauce about an hour before serving.

    This sauce looks great and I love Italian fennel sausage. it’s great to eat with the family, it should be loud, opinionated and fuuun!! We always try to have a big family dinner on Sunday. GG

    Dream Baby and I are gonna make us some KICK ASS SAUCE next weekend! Thank your Daddy for sharing the recipe. BTW we lived in Boston for 13 yrs where it was gravy for our North End friends. Oh when you and Liverpool come to visit, bring yo Daddy and Saint with…..if they make sauce one night… room and board is free for the rest of the stay!!!!

    Oooooo – another wonderful sauce recipe! I have several now, gathered over the years from Italians, Cajuns, friends, family, the Air Force, the Army – and I must say, this one sounds and looks to be THE BEST of them all.     My Dad makes some kick ass chicken n dumplings. In fact, I called him this morning for his recipe (he keeps in his head of course, not on paper). Truth be told, he’s given me the recipe a hundred times. I just really called cause I wanted to hear his voice. I miss my Dad!

    Now that’s good cooking! Another ethnic Italian here and Sunday dinner with family, pasta, and a few loud discussions are a sacred event. It’s a damn good thing there were no Italians in Boston harbor when the British invaded during the Revolutionary War, for if Paul Revere went riding down the street saying, “The British are coming!!!” those Italians would have said, “No problem – just pull up a few more chairs. There’s plenty of food here!”

    I always tell my friends that the very first piece of furniture Italians buy when they are newly wed is a very large and sturdy table that seats a bunch and holds a lot of food…

    That sauce looks awesome! Pass me another piece of sausage, and another helping of pasta please! Thanks for sharing a slice of the family Kim.

    All I can say is totally awesome and there is only one “Bobby Sisto”!!!! Sundays in an Italian home are the bread of life, I sure miss having ours. Hang on to them, they are precious.     Kim, you’ll be happy to know that I have diligently copied Papa’s recipe and plan to make it this week! I have never added bacon to the sauce and I am curious to see how that alters the taste!
